| Personally I would just swap in a 5 speed tranny (no pun intended), drive shaft, and change the head gasket.
That is a weird situation where someone swapped in an auto, They must have been in a pinch.
What mechanics are you speaking with? I've never met a real mechanic who would turn down a challenge, and cash to fund his expedition. Except the oil change pro's at VIP. I can definitely see how they would be intimidated.
The hard parts already done. The pedals are in, all you need to do is a transmission & drive shaft swap, and run a line for the clutch slave cylinder. Give a call to a transmission shop and get a quote for labor only.
It's easy to find parts cheap. I've got a whole 5 speed E30 parted out in my garage if you should need anything.
