I think its said that the water to-air version drops abit of horsepower due to a slight drop in boost but gains it back with the extra cooling. However, it is basically for track use as you could imagine how fast the water would run out even with a larger water reservoir.
As for the air-to-air it performs better as an all rounder while still good on the track, tends to get hotter quicker that the other.
I guess its all a decision on what suits your preference. I think the air-to-air versions are much better priced though.

(I could be wrong to all of the above as I have no experience with water-to-airt IC's)
