First off, it's Sebring
I'd recommend going to a SunshineBimmers/PBOC track day (

www.pbocflorida.com) or a Chin Motorsports (
www.chinmotorsports.com) track day. These guys will probably (the key word is probably - keep in mind that some instructors aren't necessarily good teachers) know your kind of car, and will be able to give good pointers. Going both days at a Chin school is not feasible for you at this moment, though, as Sundays with Chin are for solo (no instructors) members only. You can run both days with SunshineBimmers/PBOC, though.
Of all clubs, I would NOT recommend going to a SAFE Motorsports track day until you're confident with your abilities and feel that you will, most likely, not gain from an instructor giving you tips (there are no instructors with SAFE).
